Ingredients
For the salad:

2 lbs (about 1 kg) mixed ripe tomatoes – heirloom, cherry, beefsteak – any colors you can find

2–3 Persian cucumbers or ½ English cucumber, halved and sliced (for crunch contrast)

A handful of fresh basil leaves, torn (plus extra for garnish)

For the magic dressing:

Method

Slice the tomatoes – cut cherry tomatoes in half, slice larger ones into wedges or ½-inch thick rounds. Place them in a large bowl.

Salt the tomatoes lightly – sprinkle with a pinch of flaky salt and let sit for 5 minutes while you prep everything else. This draws out juices, which will become part of the dressing.

Make the dressing – in a small jar, combine olive oil, vinegar, honey, garlic, crushed cumin, lemon zest, and a good crack of pepper. Shake vigorously until emulsified.

Assemble – add the sliced red onion, cucumber, and torn herbs to the tomatoes. Pour over the dressing and gently toss with your hands (or two spoons) so everything is coated but tomatoes don’t get smashed.

Let it marinate – if you have time, let it sit at room temperature for 15–20 minutes. This allows the tomatoes to release their juices and absorb the cumin-garlic magic.
