Homemade Bagel Bites
Ingredients
For the mini bagels:

2 cups all-purpose flour (plus extra for dusting)

1 tbsp baking powder

1 tsp salt

1 cup plain Greek yogurt (full-fat works best)

1 egg, beaten (for egg wash)

Optional: sesame seeds, poppy seeds, dried garlic flakes for topping
For the topping:

½ cup pizza sauce or marinara

1 ½ cups shredded mozzarella cheese

Pepperoni slices (mini or regular cut into quarters)

Optional extras: diced bell peppers, sliced black olives, cooked sausage crumbles, mushrooms, etc.
Instructions

Make the bagel dough:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, mix flour, baking powder, and salt.

Add Greek yogurt and stir until a shaggy dough forms.

Turn dough onto a lightly floured surface and knead 2–3 minutes until smooth (add a little flour if sticky, but don’t over-flour).

Shape mini bagels:

Divide dough into 12–16 equal pieces.

Roll each into a ball, poke a hole in the center with your finger, and gently stretch into a small bagel shape (about 1.5–2 inches in diameter).

Place on prepared baking sheet.

Pre-bake bagels:

Brush tops with beaten egg wash.

Sprinkle with sesame or poppy seeds if desired.

Bake for 10–12 minutes until lightly golden. Remove and let cool slightly. Leave oven on.

Add toppings:

Spread about 1 tsp pizza sauce on each mini bagel.

Sprinkle with shredded mozzarella.

Add pepperoni or other toppings.

Bake again:

Return to oven for 6–8 minutes until cheese is melted and bubbly.

Let cool 2–3 minutes before serving (the cheese will be very hot!).

For quicker version, use store-bought mini bagels or English muffin halves instead of making dough.

Freeze after step 3 for make-ahead mini bagels — then top and bake from frozen, adding 2–3 extra minutes.

Experiment with different cheeses: try a mix of mozzarella and cheddar, or add a sprinkle of Parmesan.
